An important source of protein in delicious Asian cuisine, tofu has become very popular in the U.S., where it can now be found in most supermarkets. Tofu is bean curd, made by adding a mineral salt (usually, calcium sulfate) and water to a soybean mash. The mineral salt makes the protein and fiber in the soy mash turn thick and smooth. Depending upon the amount of water it contains, tofu may vary in consistency.
Tofu is rich in calcium and is an inexpensive source of protein, making it a good vegetarian substitute for meat or dairy products. Plain tofu has almost no taste, but it readily absorbs the flavor of herbs and spices added when you prepare a meal.
Studies indicate that regular tofu consumption, as part of a well balanced diet, may be associated with reduced risk of heart disease, lower levels of cholesterol, improved bone density and reduced risk of fractures
High protein foods tend to satisfy appetite better than foods with less protein. One study found that tofu produced greater satiety than animal protein. The effect lasted for several hours and was not associated with a rebound increase in appetite when it ended.
The special benefits of tofu have been attributed to two major components: isoflavones and amino acids.
Isoflavones are a special group of bioflavonoids found more highly concentrated in soy than in any other food and are:
1) Potent antioxidants. Antioxidants may help protect the cells in your body from damage to DNA and cell membranes.
2) Anti-inflammatory. Inflammation in the walls of blood vessels, by a chemical called "soluble vascular cell adhesion molecule-1 (sVCAM-1)", is a major cause of cardiovascular disease. Soy isoflavones may help inhibit this type of inflammation.
3) Hormone modulators. Isoflavones have a structure somewhat similar to estrogen and modify the effects of estrogen in your body. It is believed that this hormone modulating effect may account for the decreased risk of breast cancer and osteoporosis associated with regular consumption of tofu.
Soy foods may reduce levels of cholesterol and triglycerides in the blood and can also reduce blood pressure. Research has shown that the cholesterol-lowering effect of soy is due to the amino acid profile of soy protein. A unique fraction of soy protein called "7S globulin" can increase the liver’s ability to remove dangerous LDL-cholesterol from the blood.

Organic or Natural Skin Care Products - what’s the difference?

Today more and more people are becoming aware of the benefits nature has to offer and are seeking environmentally friendly products in their homes and in their skin care regimen. Therefore, it is no surprise that skin care manufacturers are catering to this wave of eco-friendly consumers and labeling products natural and/or organic.
The words natural and organic are interpreted and implied as the same meaning, however, there are distinct differences between the two.
Natural - this implies that one, some, or all of the ingredients are unprocessed and comes from nature, such as fruits, vitamins and minerals for instance; Aloe Vera is a natural product thus a product with Aloe Vera could be labeled natural. However, that does not mean the natural ingredient was grown organically and it does not mean that the skin care product is not mixed with synthetic/chemical ingredients. The term natural is not regulated in the skin care industry so the term natural is used loosely and extensively in marketing ploys.
Organic - means that no chemicals or pesticides were used during the growth of various plants and herbs. Additionally, the processes to extract the various oils from the plant did not use any type of chemical processing. If a product with Aloe Vera in it is labeled organic, then the Aloe would have had to been grown without any type of pesticides and there would be no chemical processing to extract the oils from the plant. Thus the product could be labeled organic.
A good analogy would be a skin care product which lists papaya and Aloe Vera. If the papaya, and Aloe Vera were grown with any type of pesticides then the skin care product can not be labeled organic, however, it could be labeled all natural and still can contain harmful chemicals.
Additionally, just because a product is labeled natural or organic that does not mean you will not have an allergic reaction. A product made with beeswax or honey would not be recommended for people that are allergic to bees, a product with almond oil would not be recommended for people with nut allergies. A skin test is always recommended with any new skin care product whether it be a synthetic, natural or organic product.
The word botanical is used a lot in skin care products too. This implies that the product includes ingredients that are derived from plants and/or trees, such as Aloe Vera and coconut. Again, botanical products can be labeled as natural but does not mean they are also organic.
Currently there are no legal standards for the terms organic and/or natural for personal care products sold in the United States. Therefore, skin care manufacturers are allowed to make all kinds of claims that their products are pure, natural and/or organic. A case in point is Clairol Herbal Essences which gave users an “organic experience”, however there isn’t much about this product that is herbal or organic as it contains more than a dozen synthetic petrochemicals and has a moderate toxicity rating. The skin care product industry is a billion dollar business and the claims they make concerning their products may or may not be true. Additionally, if you are paying top dollar for cosmetics that read pure, natural or organic, read the label, research and decide for yourself. The most prominent ingredient on the label will be at the top of the ingredient list and the least ingredient at the bottom. So if your natural or organic ingredient is at the bottom of the ingredient list chances are the amount in the product is minute and has no significant value for your skin.
As a personal note, I would like to state that I do believe in the natural and organic concept in skin care products, although if I am buying natural or organic products I expect them to be just, natural with safe synthetic chemicals or truly organic. There are so many chemicals in skin care products that can be harmful to your health and these chemicals are so detrimental to our environment so I read the labels and do the research to find some “green” in the products I use.

Two sides of the cognition coin

The last couple of weeks has seen a couple studies that take a long look at brain function relative to health and habits. Most specifically the studies look at weight and diet. The results of both really aren’t surprising to those of us that follow the literature but they bear repeating, especially for those looking to age against the machine.
Researchers at the University of Pittsburgh looked at the volumes of people’s brains and found that several changes to the anatomy of the brain correlated with weight. Published in the journal Human Brain Mapping, the study found that people who are obese show atrophy in their frontal lobes, the part of the brain associated with reasoning, planning, parts of speech, movement, emotions, and problem solving. People who are merely overweight show atrophy of their basal ganglia, a part of the brain associated with coordination of muscle motion and the part that breaks down in Parkinson’s disease. Moreover, overweight and obese patients had significantly lower brain volumes than normal weight people. All of this just adds weight to the arguments against obesity.
Happier news comes from the Journal of the American Medical Association. Much has already been written about the Mediterranean diet, but what French researchers found was that people who adhered more closely to a Mediterranean diet had a much slower onset of cognitive decline as they aged. This was measured using one particular type of testing; the other tests they used showed less consistent results. Even so, given the benefits of reduced risk of disease and mortality that come with the Mediterranean diet, better cognition is a delightful bonus.
Any way you look at it, healthy eating and maintaining an appropriate weight are important factors in maintaining both physical and mental health as we age.

County officials to review ban on salvia

Officials in Worcester County, Maryland are planning to ban the substance salvia divinorum. Salvia divinurum is a legal substance that causes intense hallucinations when smoked. Millions of Americans are being exposed to potentially cancer-causing levels of radiation from medical imaging tests. Per capita radiation doses in the U.S. have risen sixfold since the early 1980's, and according to Reza Fazel, MD of Atlanta's Emory University School of Medicine, "Our study shows that a lot of people are getting high doses of radiation."
Average Americans typically receive no more than 3 millisieverts (mSv) of radiation annually, but increased use of nuclear imaging and CT scans has increased radiation exposure. Myocardial perfusion imaging for heart disease delivers about 15 mSv per test, accounting for the largest single radiation exposure. The highest radiation exposures occurred among women and older adults in the study published in the "New England Journal of Medicine".
"We don't want to scare people and have them refuse necessary procedures, but physicians and patients need to be aware that radiation is not benign," states Fazel. 80% of radiation exposures occured among non-hospitalized patients, with CT scans and nuclear imaging comprising three-fourths of radiation exposure.
